Abstract:
It is shown that a constant electric field can initiate an isothermal phase transition between the states of two-dimensional liquid and two-dimensional crystal over a large area of a monomolecular layer composed of amphiphilic molecules. The transition starts with a collective turning of dipole heads of molecules under the effect of the field over the entire aforementioned area. The turning probability depends heavily on the area on which the transition can occur irrespective of the state of adjoining areas. The larger the area, the lower the probability. In the cytoplasmic membranes the areas are small, and the transition to a new state occurs almost immediately after the field is changed. In contrast, in artificial films these areas are larger; as a result, the phase transition can delay several hours after the field is changed. This constitutes the most important distinction between the films and cytoplasmic membranes.
